Even if you got back in time, you can go to the temple and enter the warp spot to be warped in the boss room instantly to beat the boss, so spring comes back. How do i get the gilded sword in Zelda Majora's Mask?
You have to use that song to back in time, and if I remember correctly you have to do all the sequences as fast as you can and get there.
While you would have to restart the entire temple (e.g. collect all the Stray Fairies again) if you saved and went back to Day 1, you will be able to keep any items you got in the temple, as well as any power-ups you received from the Great Fairy if you did collect all the Stray Fairies.

If you want to have Snowhead restored and don't want to go through then entire temple again, simply go into the beginning. A circle of light should appear, and if you step in it, you'll be transported to the lair of the temple's boss. You can defeat him in this way as many times as you want, with Snowhead being restored after you do.

A walkthrough for getting the sword:

1) Save and go back to Day 1.

2) Play the Song of Time backwards to make time move more slowly.

3) Take out 150 Rupees from the Clock Town Bank.

4) As a Goron, buy a Powder Keg from the Bomb Shop. (He'll only sell it to you if you know how to use Powder Kegs already. If you don't, you can't get the sword yet. See the next section for details on how to use Powder Kegs.)

5) Play the Song of Soaring to warp to the Mountain Village. It will be winter.

6) Go to the smithy and shoot a Fire Arrow at his hearth to unfreeze it, then have him upgrade your sword to a Razor Sword. He'll have to take your sword for a full day to do this, so make sure it's still the morning of Day 1 when you give it to him.

7) Warp to Snowhead, get into the temple again and step into the circle of light.

8) You'll face Goht again. Beat him the same way you did the last time.

9) Now, srping should come to the Mountain Village again. Use the Powder Keg to blow up the boulder near the Goron Racetrack.

10) Enter the Goron Races as Darmani. You can enter as many times as you like; play until you win. The prize is a Bottle filled with Gold Dust.

11) Get good at the race. Make sure you get the Bottle before dawn on Day 2. Once you have this Bottle, go to smithy and get your new Razor Sword. Use it a few times, but make sure not to use it over 100 times or its edge will be dulled.

12) Go back to the smithy and ask him to upgrade your Razor Sword into a Gilded Sword. Present him with the Gold Dust and he'll do it for free. Again, he'll take your sword for a whole day, so you'll have to wait until dawn on Day 3 to pick it up.

13) Once you have the sword, play the Song of Time again to warp back to Day 1. Congratulations - you now have the best sword in the game!

If you don't know how to use Powder Kegs, you can't get the sword yet. In order to use them, you have to go to Goron Village. (It doesn't matter if it's winter when you do this as long as you have Fire Arrows.) From the Twin Islands entrance, go left off the path and onto the ground. Walk around the wall until you see an area blocked by ice. Shoot a Fire Arrow at it and it'll melt.

Now, go down the ramps/slides until you meet a large Goron. He'll certify you (as Darmani) to be able to buy and use Powder Kegs if you pass his test. Agree and he'll give you a lit Powder Keg to carry to the Goron Racetrack.

Throw the Powder Keg to the top of the first ramp, then curl up and roll up to the ramp yourself. Repeat this until you're at the top. Then carry the Powder Keg and walk back towards the Twin Islands entrance. (Sometimes, and enemy will pop out of the snow and attack you. Don't waste your time fighting. Keep walking; you may lose a little health but in the end the enemy will give up the chase.)

Next, walk across the Twin Islands and up near the entrance to the Mountain village. Stop - turn right and you'll see another set of ramps. Throw the Powder Keg onto them; roll, repeat. At the top you'll see a large boulder and a sign saying that this is the Goron Racetrack. Put the Powder Keg down next to the boulder, walk away and wait until it explodes. Once it has, it'll open the Goron Racetrack.

Now, go back and visit the large Goron again. He'll praise you for passing his test and give you a free Powder Keg. What you do with the Keg is up to you, but you can use it to get into Romani Ranch. At any rate, if you save ago back to Day 1, you can follow the steps above to get the Gilded Sword.
